Brinjal Curry Recipe


South Indian style Brinjal Curry Recipe. Brinjal Curry is easy to prepare and perfect for Chapati and Roti. Brinjal Curry Recipe is suitable for both Breakfast and Lunch/Dinner.


Ingredients

1. Coconut Flakes - 1/4 bowl
2. Water for Cooking
3. Green Chilly - 10 Nos
4. Brinjal (Medium Size) - 9 Nos
5. Curry Leaves - 1/4 bowl
6. Mustard Seeds - 1 tsp
7. Turmeric Powder - 1 tsp
8. Oil - 2 tbsp
9. Onion - 1
10. Roasted Niger Seeds Powder - 2 tbsp
11. Fried Gram Powder - 2 tbsp
12. Salt to taste
13. Tomato - 2 Nos






Procedure


Step 1:
Add coconut flakes, green chilly, small amount of water and grind well to get smooth mixture (paste like mixture).

Step 2:
Set burner on medium flame. Add oil to Kadhai and heat it for 2 min. Add Mustard seeds, Curry leaves and chopped Onions and fry for 30 seconds. Add Turmeric powder and chopped Brinjal. Fry for 1 minute. Add chopped Tomatoes. Add water to cook vegetables. Mix well and cook for 8-10min with lid closed. 

Step 3:
Added grinded mixture to above brinjal curry. Add salt to taste. Mix well and cook for another 3-5min with lid closed. Add roasted Niger Seeds powder, Fried Gram powder and mix well again. 

Brinjal Curry is ready to serve.
